Joe Widmer of Widmer’s Cheese Cellars in Theresa, Wisconsin, is a third-generation cheesemaker known for his dedication to traditional methods in producing Wisconsin's own Brick cheese and stirred-curd Colby. Using the same equipment and even the bricks his grandfather used to press whey from cheese, Widmer is celebrated for his commitment to authenticity, particularly with his hand-washed, surface-ripened Brick cheese. Although shifting demographics have led to more cheddar sales than Brick, Joe maintains his family’s craft with minimal shortcuts and the same open vats and wooden curing racks.
