About Sfoglini
Sfoglini pasta combines traditional Italian techniques with the best of American ingredients, creating artisanal pasta that celebrates North American grains. Founded in Brooklyn in 2012 by chef Steve Gonzalez and creative director Scott Ketchum, Sfoglini uses traditional bronze dies to produce pasta with a rough texture ideal for sauce adhesion. Each pasta is slow-dried at low temperatures to retain flavour and nutrients, and features organic durum semolina and other grains sourced from North American farms. Sfoglini also produces seasonal pastas using local grains from small farms, ensuring fresh, diverse offerings. Based in Coxsackie, NY, Sfoglini’s entire production process — from creation to packaging — occurs with meticulous care.
