About Fromagerie Lincet
Founded in 1895 in Gaye, Marne, Fromagerie Lincet relocated to Saligny in Yonne in 1957, where it remains today. Early on, Lucien Lincet emphasized food safety, implementing washable surfaces in production areas as early as 1930. Following World War II, Jean Lincet worked tirelessly to secure sufficient milk for production, preserving the family’s cheese-making heritage through challenging times. Despite adopting modern methods, Lincet's cheeses maintain traditional recipes, using local cow’s milk, salt, lactic ferments, and rennet. Ensuring quality, each cheese undergoes over 40 tests. In 1989, Didier Lincet took the helm, upholding the values of small-scale production and supply chain integrity, while expanding markets in France and abroad.
