About Gorgonzola
Gorgonzola is a famous Italian blue cheese made from cow’s milk, originating from the regions of Lombardy and Piedmont. It has a rich, creamy texture with characteristic blue-green veins running through its interior, which develop from the introduction of Penicillium mold. There are two main varieties: Gorgonzola Dolce, which is soft, mild, and slightly sweet, and Gorgonzola Piccante, which is firmer, sharper, and more robust in flavour. The cheese has a tangy, slightly pungent taste that intensifies with age. Gorgonzola melts beautifully, making it a great addition to pasta, risottos, and sauces, while also pairing well with honey, figs, walnuts, and wines like Moscato or Barolo.
