About Fromager d’Affinois
Fromager d’Affinois, a beloved soft French cheese, was created in 1981 by cheesemaker Jean-Claude Guilloteau in the picturesque Rhône-Alpes region of southeastern France. Inspired by the dairying traditions of his home and a passion for innovation, Guilloteau developed a unique method that yielded a luxuriously creamy and protein-rich cheese. Originally named Pavé Dauphinois, after the Dauphiné region and Lyon’s cobblestone streets, the cheese quickly garnered acclaim, prompting Guilloteau to open dairies in the Massif du Pilat and near the Alps to meet the growing demand. Renamed Fromager d’Affinois, a play on "affinage" (cheese-ripening), this cheese has since captivated palates worldwide with its velvety, buttery texture that melts in the mouth.
