About Hiramasa
Hiramasa, also known as Yellowtail Kingfish or Yellowtail Amberjack, is a premium fish prized for its firm, buttery texture and clean, slightly sweet flavour. It is often mistaken for Japanese Hamachi but is leaner, with a more delicate taste and higher fat content than other yellowtail species. Hiramasa is commonly used in sushi and sashimi but is also excellent for grilling, roasting, or ceviche due to its rich, yet mild, flavor. Sustainably farmed varieties, such as those from Australia, are highly sought after for their quality.
