Idiazábal is a traditional, pressed cheese from Spain's Basque Country and Navarre regions, made from unpasteurized sheep’s milk, primarily from Latxa and Carranzana breeds. Certified by a Denomination of Origin since 1987, Idiazábal cheese is crafted with whole milk curdled using natural lamb rennet and aged for at least two months. This cheese features a firm, pale yellow interior with a creamy, buttery profile, a slight piquancy, and a distinctive sheep’s milk character. The cheese is versatile, often enjoyed with quince jam or grated over dishes to enhance its nutty and mildly acidic notes.
