About Jamón Serrano
Jamón Serrano is a type of dry-cured ham from Spain, primarily made from white and non-Ibérico pig breeds. The production process involves trimming and cleaning fresh hams, covering them in salt for about two weeks to remove excess moisture, and then rinsing them off before hanging the hams to dry for approximately six months. Finally, they are aged in cool, dry conditions for six to 18 months in higher elevation drying sheds, which contribute to the ham's "mountain" designation.
