Using Shio Koji
Liquid Shio Koji is unpasteurized and contains enzimes that work to tenderize meat and eliminate strong natural meat aromas. Small amounts will add depth and complexity to the flavour and it is often used to replicate some of the savoury notes that develop when meat is dry-aged.
About Hanamaruki Foods
Hanamaruki Foods, established in 1918 in Ina City, Nagano Prefecture, began as a small miso producer under the trademark “Maruki-jirushi” and rebranded as Hanamaruki in 1964. Expanding nationwide, the company became a household name for high-quality miso and gained international recognition as the official miso supplier for the 1997 Nagano Olympics. Today, Hanamaruki is synonymous with traditional Japanese miso.
