About Manchego
Manchego is a famous Spanish cheese made from the milk of Manchega sheep, which graze in the La Mancha region, giving the cheese its unique, rich flavour. Known for its firm, slightly crumbly texture, Manchego has a distinctive buttery taste with nutty, grassy notes and a mild sweetness that intensifies with age. It is traditionally aged for anywhere from two months to over a year, with younger Manchegos being softer and more delicate, while aged varieties develop sharper, more complex flavours. The cheese is easily recognized by its rind, which bears a woven pattern, a nod to its traditional grass wrapping.
