About Piave Vecchio
Piave is a traditional Italian cheese made from cow's milk, originating from the Veneto region in the northeastern part of Italy. Named after the Piave River, this cheese is known for its firm texture and sweet, nutty flavour, which deepens as it ages. Piave is produced in various aging stages, ranging from "Fresco" (fresh) to "Vecchio" (aged), with the latter being the most popular for its complex, intense taste. The cheese has a golden yellow rind and a smooth, crumbly interior that becomes more granular as it matures. Piave is often used in cooking, grated over pasta, risotto, or polenta, but it is also enjoyed on cheese boards. Piave has a Protected Designation of Origin (PDO) status, ensuring its production follows traditional methods.
