Crafted through natural fermentation methods, this vinegar combines local brown rice, spring water, brown rice koji, and beef dashi made from water, konbu seaweed, dried bonito, and natural beef flavouring. The result is a translucent rose-amber liquid with aromas reminiscent of simmering beef dashi and fermented rice, offering savory notes of cured meats, umami, and seaweed. Aged for two years, this vinegar develops a light yet complex flavour profile, making it an excellent addition to dressings, marinades, and sauces. It can also be brushed onto grilled meats, fish, or mushrooms, or combined with sesame oil, hot sauce, and honey to create a flavorful dipping sauce for dumplings.
