About Speck
Speck is a dry-cured, lightly smoked ham from South Tyrol, Italy, made from seasoned pork legs that are cured, cold-smoked with beechwood, and aged for several months. It has a firm yet tender texture with a balanced mix of salt, smoke, and aromatic spices, making it more savoury than prosciutto. Traditionally served thinly sliced with cheese, bread, or fruit, speck also enhances pasta, risottos, salads, and dumplings, and can be pan-fried for added depth. It pairs well with crisp whites like Pinot Grigio, medium-bodied reds like Lagrein, and sparkling wines like Franciacorta, which balance its rich, smoky flavours.
