About Stilton
Stilton is a classic English blue cheese made from cow’s milk, known for its rich, crumbly texture and bold, tangy flavour. It has a creamy, slightly moist interior marbled with blue veins, which develop as the cheese ages. Stilton comes in two varieties: Blue Stilton, which is the most well-known, and the less common White Stilton, which lacks blue veining and has a milder taste. To be officially called Stilton, the cheese must be made in one of three counties—Derbyshire, Nottinghamshire, or Leicestershire—following strict production guidelines. It pairs beautifully with port wine, honey, nuts, and fruits like pears and apples. Its robust flavour makes it a standout ingredient in salads, sauces, and cheese boards.
