About Taleggio
Taleggio is a semisoft, washed-rind, smear-ripened cheese from Italy, named after the Val Taleggio region. With a protected designation of origin, only Taleggio made in Lombardy or Piedmont can carry the name. This cheese has a thin, pinkish-brown rind and a creamy, pale yellow interior, with a strong aroma yet surprisingly mild flavour marked by a fruity tang. Production occurs in autumn and winter, where acidified milk mixed with calf rennet is set into square blocks, aged for six to ten weeks on wooden shelves in chambers or traditional caves. The cheese is washed weekly with seawater to maintain its rind, which develops a unique orange or rose hue. Traditional aging practices near Valsassina utilize cave breezes to help mature the cheese, which bears a four-leaf clover mark from the Consorzio Tutela Taleggio.
