Produced in the Beemster region of the Netherlands, the cheese is made from the milk of cows that graze on the lush, fertile pastures of the area, which is a UNESCO World Heritage Site. Beemster cheese is crafted using traditional methods that have been passed down for centuries, with the milk being pasteurized and the cheese being aged for various periods, ranging from a few months to several years. The aging process gives Beemster its distinctive taste—its younger varieties are mild and creamy, while the aged versions (such as Beemster XO) develop deep, caramelized flavours and a firmer texture.
